The LORD said to Moses, “Say to the Israelites: ‘Do not eat any of the fat of cattle, sheep or goats. The fat of an animal found dead or torn by wild animals may be used for any other purpose, but you must not eat it. Anyone who eats the fat of an animal from which a food offering may be presented to the LORD must be cut off from their people. Leviticus 7:22-25
Any meat lover will tell you, the fat is where the taste is. Yet, the fat is where the cholesterol is that can cause clogged arteries and heart disease. What does God know that we don’t know? Obviously, a lot. Health reasons may not be the only reason God prohibited Israel from eating the fat, but it certainly helped keep Israel a healthy nation. You can pick out many other things like this. How about only eating creature in the seas that have scales. That eliminates the crustaceans and shellfish (crab, lobster, shrimp, and more) that scavenge the ocean floor, but taste so good, These foods often have heavy metals and bacterial vibrosis. Not limited to food, sometimes we trust our doctors more than trusting our Lord. There is a lot for us to gain by trusting the Lord with all your heart, not leaning on your own understanding. Let Him make your way straight.
